- 420g Lentils
- 4 potatoes Potatoes
- 180g Frozen peas
- 2 carrots Carrot
- 1 onion Brown onion
- 260g Canned tomatoes
Method
- Prep the ingredients Set out lentils, potato, peas, carrot, onion and canned tomatoes. Wash, trim, and chop potato, carrot and onion before heating the pan. Drain lentils. Measure canned tomatoes.
- Cook the potatoes Boil or microwave potato until tender. Mash, crush, or split them depending on the dish.
- Cook the filling Cook peas, carrot and onion in a large pan over medium heat until softened, then stir in lentils to warm through.
- Moisten the filling Stir in canned tomatoes and simmer for 5-8 minutes until the mixture is thick, not watery.
- Assemble Spoon the filling into a baking dish or oven-safe skillet, then spread the potato evenly over the top.
- Finish Serve straight from the pan once the filling is hot and the potato is tender.
- Serve Divide into hearty serves, keeping the potato and filling together so each portion has both layers.
