Ingredients

  • 360g Pasta
  • 180g Baby spinach
  • 90g Parmesan
  • 220ml Milk
  • 2 cloves Garlic
  • 180g Mushrooms

Method

  1. Prep the ingredients Set out pasta, spinach, parmesan, milk, garlic and mushroom. Wash, trim, and chop spinach, garlic and mushroom before heating the pan. Measure parmesan and milk.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
  3. Cook the base Heat a large pan over medium heat and cook spinach, garlic and mushroom until softened and smelling good.
  4. Make the sauce Stir in milk and simmer gently for 3-5 minutes until slightly reduced. Keep the heat moderate so the milk does not split.
  5. Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
  6. Serve Finish with parmesan, then divide into bowls while it is still hot.
