  • 520g Chickpeas
  • 2 sweet potatoes Sweet potato
  • 140g Baby spinach
  • 2 tomatoes Tomatoes
  • 22ml Olive oil

Method

  1. Prep the ingredients Set out chickpeas, sweet potato, spinach, tomato and olive oil. Wash, trim, and chop sweet potato, spinach and tomato before heating the pan. Drain chickpeas. Measure olive oil.
  2. Cook the base Cut sweet potato into even pieces and roast or boil until tender, then let it steam off so the bowl is not watery.
  3. Prepare the protein Drain chickpeas well, rinse the legumes, and warm them briefly for a hot bowl.
  4. Prepare the vegetables Chop spinach and tomato into bite-sized pieces so every forkful has a mix of textures.
  5. Season the bowl Drizzle olive oil over the warm ingredients and season with salt and pepper before assembling.
  6. Assemble Divide sweet potato, chickpeas, and vegetables between bowls.
  7. Serve Serve warm, checking that each bowl has a balanced mix of protein, vegetables, and base.
