- 2 sweet potatoes Sweet potato
- 420g Black beans
- 180g Corn kernels
- 2 tomatoes Tomatoes
- 100g Baby spinach
- 90g Cheese
Method
- Prep the ingredients Set out sweet potato, black beans, corn, tomato, spinach and cheese. Wash, trim, and chop sweet potato, tomato and spinach before heating the pan. Drain black beans and corn. Measure cheese.
- Cook the base Cut sweet potato into even pieces and roast or boil until tender, then let it steam off so the bowl is not watery.
- Prepare the protein Drain black beans well, rinse the legumes, and warm them briefly for a hot bowl.
- Prepare the vegetables Cook corn for 3-5 minutes until tender, then add tomato and spinach off the heat.
- Season the bowl Season the warm ingredients with salt and pepper before assembling.
- Assemble Divide sweet potato, black beans, and vegetables between bowls, then add cheese.
- Serve Serve warm, checking that each bowl has a balanced mix of protein, vegetables, and base.
