  • 460g Lentils
  • 340g Pasta
  • 260g Mushrooms
  • 400g Canned tomatoes
  • 1 onion Brown onion
  • 2 cloves Garlic

Method

  1. Prep the ingredients Set out lentils, pasta, mushroom, canned tomatoes, onion and garlic. Wash, trim, and chop mushroom, onion and garlic before heating the pan. Drain lentils. Measure canned tomatoes.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
  3. Cook the base Heat a large pan over medium heat and cook mushroom, onion and garlic until softened and smelling good, then stir in lentils to heat through.
  4. Make the sauce Stir in canned tomatoes and simmer for 8-12 minutes until thickened and evenly mixed.
  5. Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
  6. Serve Toss once more, then divide into bowls while it is still hot.
