  • 520g Black beans
  • 280g Rice
  • 200g Corn kernels
  • 2 tomatoes Tomatoes
  • 130g Cheese
  • 1 capsicum Capsicum

Method

  1. Prep the ingredients Set out black beans, rice, corn, tomato, cheese and capsicum. Wash, trim, and chop tomato and capsicum before heating the pan. Drain black beans and corn. Measure cheese.
  2. Cook the base Cook rice according to the packet directions, then let it steam off for a few minutes so the bowl is not watery.
  3. Prepare the protein Drain black beans well, rinse the legumes, and warm them briefly for a hot bowl.
  4. Prepare the vegetables Cook corn for 3-5 minutes until tender, then add tomato and capsicum off the heat.
  5. Season the bowl Season the warm ingredients with salt and pepper before assembling.
  6. Assemble Divide rice, black beans, and vegetables between bowls, then add cheese.
  7. Serve Serve warm, checking that each bowl has a balanced mix of protein, vegetables, and base.
