Chicken Burrito Wraps

Ingredients

• 560g Chicken breast
• 7 wraps Wraps
• 300g Black beans
• 180g Corn kernels
• 1 capsicum Capsicum
• 100g Cheese

Method

1. Prep the ingredients Set out chicken breast, wraps, black beans, corn, capsicum and cheese. Wash, trim, and chop capsicum before heating the pan. Drain black beans and corn. Measure cheese.
2. Cook or mix the filling Cut chicken breast into strips, then cook in a pan over medium heat, until cooked through.
3. Warm the beans Warm black beans in the pan for 2-3 minutes so they are hot before rolling.
4. Warm the wraps Warm the wraps in a dry pan or microwave for 10-20 seconds so they fold without cracking.
5. Fill the wraps Lay the wraps flat and add corn and capsicum in an even line through the middle.
6. Add cheese Scatter over cheese so each wrap gets some richness and saltiness.
7. Roll Add the filling, fold in the sides, then roll tightly from the bottom.
8. Serve Cut in half and serve warm, or wrap tightly for packed serves.
