Big Brekkie Egg Potato Hash

Ingredients

• 4 eggs Eggs
• 2 potatoes Potatoes
• 2 tomatoes Tomatoes
• 80g Baby spinach
• 20ml Olive oil

Method

1. Prepare Wash the potato and cut into 1 cm dice. Wash and chop the tomato and spinach. Measure the olive oil.
2. Cook the potato Heat the olive oil in a non-stick pan over medium heat. Add the potato and cook for 12-15 minutes, turning regularly, until tender in the centre and lightly browned.
3. Add the vegetables Add the tomato and spinach and cook for 2-3 minutes until softened.
4. Add eggs Beat the eggs until even, then pour them over the cooked vegetables.
5. Finish the hash Cook gently, stirring and folding the eggs through the vegetables until the eggs are set.
6. Serve Divide into serves while hot.
