Ingredients

  • 240g Rice
  • 4 eggs Eggs
  • 120g Frozen peas
  • 1 carrot Carrot
  • 35ml Soy sauce

Method

  1. Cook the rice Cook the measured dry rice following the packet instructions until tender, then drain well. Spread on a plate to let excess steam escape while you prepare the other ingredients.
  2. Prepare the ingredients Wash, trim, and finely dice the carrot. Beat the eggs in a bowl and measure the frozen peas and soy sauce.
  3. Scramble the eggs Heat a large non-stick frying pan over medium heat. Add the beaten eggs and stir gently for 1-2 minutes until just set, then transfer to a plate.
  4. Cook the vegetables Add the carrot, frozen peas and two tablespoons of water to the same pan. Stir over medium heat for 4-5 minutes until the vegetables are tender and the water has evaporated.
  5. Add the rice Add the cooked rice and stir for 2-3 minutes, breaking up any clumps.
  6. Season and combine Pour in the measured soy sauce and return the scrambled eggs to the pan. Toss for 1-2 minutes until evenly mixed and hot all the way through.
  7. Serve Divide into serves and serve straight away.
