Vegetarian Pea and Cheese Frittata

Ingredients

• 9 eggs Eggs
• 180g Frozen peas
• 130g Cheese
• 120g Baby spinach
• 1 onion Brown onion
• 18ml Olive oil

Method

1. Prep the ingredients Set out eggs, peas, cheese, spinach, onion and olive oil. Wash, trim, and chop spinach and onion before heating the pan. Measure cheese and olive oil.
2. Cook the firm vegetables Cook peas and onion in a non-stick pan over medium heat until tender and lightly browned.
3. Add softer vegetables Add spinach and cook for 2-3 minutes until softened.
4. Add eggs Beat the eggs until even, then pour them into the pan over the cooked vegetables.
5. Set Cook gently, stirring for a scramble or leaving mostly undisturbed for a frittata, until the eggs are just set.
6. Serve Top with cheese, let it soften briefly, and divide into serves.
