Ingredients

520g Salmon fillet
330g Pasta
1 zucchini Zucchini
100g Baby spinach
200ml Milk
70g Parmesan
2 cloves Garlic

Method

Prep the ingredients Set out salmon, pasta, zucchini, spinach, milk, parmesan and garlic. Wash, trim, and chop zucchini, spinach and garlic before heating the pan. Measure milk and parmesan.
Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
Cook the base Heat a large pan over medium heat and cook salmon with zucchini, spinach and garlic until browned or softened.
Make the sauce Stir in milk and simmer gently for 3-5 minutes until slightly reduced. Keep the heat moderate so the milk does not split.
Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
Serve Finish with parmesan, then divide into bowls while it is still hot.
