- 560g Chicken breast
- 330g Pasta
- 380g Canned tomatoes
- 2 tomatoes Tomatoes
- 2 cloves Garlic
- 60g Parmesan
Method
- Prep the ingredients Set out chicken breast, pasta, canned tomatoes, tomato, garlic and parmesan. Wash, trim, and chop tomato and garlic before heating the pan. Measure canned tomatoes and parmesan.
- Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
- Cook the base Heat a large pan over medium heat and cook chicken breast with tomato and garlic until browned or softened.
- Make the sauce Stir in canned tomatoes and simmer for 8-12 minutes until thickened and evenly mixed.
- Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
- Serve Finish with parmesan, then divide into bowls while it is still hot.
