Ingredients

  • 520g Beef mince
  • 320g Black beans
  • 320g Pasta
  • 380g Canned tomatoes
  • 130g Cheese
  • 160g Corn kernels

Method

  1. Prep the ingredients Set out beef mince, black beans, pasta, canned tomatoes, cheese and corn. Drain black beans and corn. Measure canned tomatoes and cheese.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
  3. Cook the base Heat a large pan over medium heat and cook beef mince with corn, breaking it up as it browns, then stir in black beans to heat through.
  4. Make the sauce Stir in canned tomatoes and simmer for 8-12 minutes until thickened and evenly mixed.
  5. Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
  6. Bake Transfer to a baking dish, scatter over cheese, and bake at 200C for 15-20 minutes until bubbling and golden.
  7. Rest and serve Rest for 5 minutes before dividing into serves.
