Cottage Pie Potato Skillet

Ingredients

• 560g Beef mince
• 4 potatoes Potatoes
• 180g Frozen peas
• 2 carrots Carrot
• 1 onion Brown onion
• 240g Canned tomatoes

Method

1. Prep the ingredients Set out beef mince, potato, peas, carrot, onion and canned tomatoes. Wash, trim, and chop potato, carrot and onion before heating the pan. Measure canned tomatoes.
2. Cook the potatoes Boil or microwave potato until tender. Mash, crush, or split them depending on the dish.
3. Cook the filling Brown beef mince in a large pan over medium heat, then add peas, carrot and onion and cook until softened.
4. Moisten the filling Stir in canned tomatoes and simmer for 5-8 minutes until the mixture is thick, not watery.
5. Assemble Spoon the filling into a baking dish or oven-safe skillet, then spread the potato evenly over the top.
6. Finish Serve straight from the pan once the filling is hot and the potato is tender.
7. Serve Divide into hearty serves, keeping the potato and filling together so each portion has both layers.
