Beef Black Bean Wraps

Ingredients

• 520g Beef mince
• 7 wraps Wraps
• 280g Black beans
• 180g Corn kernels
• 2 tomatoes Tomatoes
• 110g Cheese

Method

1. Prep the ingredients Set out beef mince, wraps, black beans, corn, tomato and cheese. Wash, trim, and chop tomato before heating the pan. Drain black beans and corn. Measure cheese.
2. Cook or mix the filling Cook beef mince in a pan over medium heat, breaking it up as it browns, until cooked through.
3. Warm the beans Warm black beans in the pan for 2-3 minutes so they are hot before rolling.
4. Warm the wraps Warm the wraps in a dry pan or microwave for 10-20 seconds so they fold without cracking.
5. Fill the wraps Lay the wraps flat and add corn and tomato in an even line through the middle.
6. Add cheese Scatter over cheese so each wrap gets some richness and saltiness.
7. Roll Add the filling, fold in the sides, then roll tightly from the bottom.
8. Serve Cut in half and serve warm, or wrap tightly for packed serves.
