- 560g Beef mince
- 320g Rice
- 360g Black beans
- 180g Corn kernels
- 2 tomatoes Tomatoes
- 110g Cheese
Method
- Prep the ingredients Set out beef mince, rice, black beans, corn, tomato and cheese. Wash, trim, and chop tomato before heating the pan. Drain black beans and corn. Measure cheese.
- Cook the base Cook rice according to the packet directions, then let it steam off for a few minutes so the bowl is not watery.
- Prepare the protein Cook beef mince in a pan until browned and cooked through. Stir in black beans for the last 2 minutes so they heat through.
- Prepare the vegetables Cook corn for 3-5 minutes until tender, then add tomato off the heat.
- Season the bowl Season the warm ingredients with salt and pepper before assembling.
- Assemble Divide rice, beef mince and black beans, and vegetables between bowls, then add cheese.
- Serve Serve warm, checking that each bowl has a balanced mix of protein, vegetables, and base.
