- 620g Chicken breast
- 300g Rice
- 100g Baby spinach
- 2 tomatoes Tomatoes
- 70g Cheese
Method
- Cook the rice Cook the measured dry rice following the packet instructions until tender. Drain well and keep warm while you prepare the toppings.
- Prepare the vegetables Wash and dice the tomatoes. Wash and drain the baby spinach, and measure the shredded cheese.
- Prepare the chicken On a separate chopping board, cut the chicken breast into even 2cm pieces.
- Cook the chicken Heat a large non-stick frying pan over medium heat. Add the chicken and two tablespoons of water. Cook for 8-10 minutes, turning the pieces regularly, until cooked through.
- Wilt the spinach Add the baby spinach to the cooked chicken and stir for 1-2 minutes until wilted.
- Assemble the bowls Divide the cooked rice between bowls. Add the chicken and spinach, then top with the diced tomatoes and all the measured cheese.
- Serve Serve while the rice and chicken are warm.
