- 540g Beef mince
- 310g Rice
- 180g Frozen peas
- 55g Curry paste
- 1 onion Brown onion
- 2 tomatoes Tomatoes
Method
- Prep the ingredients Set out beef mince, rice, peas, curry paste, onion and tomato. Wash, trim, and chop onion and tomato before heating the pan. Measure curry paste.
- Start the rice Cook rice according to the packet directions so it is ready when the curry finishes.
- Fry the base Heat a large pan over medium heat. Cook onion and tomato for 2-3 minutes, then stir in the curry paste for 30 seconds until fragrant.
- Cook the main ingredient Add beef mince and cook until browned, breaking it up as it cooks.
- Simmer the sauce Add about 1/2 cup water and simmer for 10-15 minutes until the curry base coats everything well.
- Finish with vegetables Add peas for the last 3-5 minutes so the vegetables soften but still hold their colour.
- Serve Spoon the curry over rice, divide into serves, and season to taste.
