Beef Mince One-Pan Rice

Ingredients

• 540g Beef mince
• 320g Rice
• 2 tomatoes Tomatoes
• 170g Frozen peas
• 2 carrots Carrot
• 1 onion Brown onion

Method

1. Prep the ingredients Set out beef mince, rice, tomato, peas, carrot and onion. Wash, trim, and chop tomato, carrot and onion before heating the pan.
2. Brown the protein Heat a large pan over medium heat and cook beef mince until browned or heated through.
3. Soften vegetables Add tomato, peas, carrot and onion and cook for 3-5 minutes until the firmer pieces start to soften.
4. Add rice Stir in rice and a splash of water. Add about 3 1/2 cups water so the rice cooks without drying out.
5. Simmer Cover and simmer gently until the rice is tender and the liquid is absorbed, stirring once or twice so it cooks evenly.
6. Serve Rest for 5 minutes off the heat, fluff the rice, and divide into serves.
