Beef Mince Pasta Soup

Ingredients

• 480g Beef mince
• 260g Pasta
• 420g Canned tomatoes
• 2 carrots Carrot
• 1 onion Brown onion
• 100g Baby spinach

Method

1. Prep the ingredients Set out beef mince, pasta, canned tomatoes, carrot, onion and spinach. Wash, trim, and chop carrot, onion and spinach before heating the pan. Measure canned tomatoes.
2. Cook the aromatics Heat a large pot over medium heat and cook carrot and onion for 3-4 minutes until softened.
3. Brown the protein Add beef mince and cook until browned or sealed on the outside.
4. Add the body Add pasta and canned tomatoes and stir well so the soup base is evenly mixed.
5. Simmer Add 4 cups water and simmer for 15-25 minutes until the starches are tender and the protein is cooked.
6. Finish Stir in spinach for the last few minutes so it stays bright.
7. Serve Ladle into bowls, season to taste, and let each bowl stand briefly so it is hot but comfortable to eat.
