- 540g Salmon fillet
- 300g Brown rice
- 2 tomatoes Tomatoes
- 110g Baby spinach
- 120g Greek yoghurt
- 20ml Olive oil
Method
- Prep the ingredients Set out salmon, brown rice, tomato, spinach, greek yoghurt and olive oil. Wash, trim, and chop tomato and spinach before heating the pan. Measure greek yoghurt and olive oil.
- Cook the base Cook brown rice according to the packet directions, then let it steam off for a few minutes so the bowl is not watery.
- Prepare the protein Cook salmon in a pan until browned and cooked through, then rest for a minute before serving.
- Prepare the vegetables Chop tomato and spinach into bite-sized pieces so every forkful has a mix of textures.
- Season the bowl Stir greek yoghurt with a pinch of salt to make a spoonable sauce. Add a spoonful of hot water only if it looks too thick.
- Assemble Divide brown rice, salmon, and vegetables between bowls.
- Serve Spoon over the yoghurt sauce, drizzle with olive oil, and season to taste before eating.
