Chicken Zucchini Tray Plate

Ingredients

• 600g Chicken breast
• 3 potatoes Potatoes
• 1 zucchini Zucchini
• 2 tomatoes Tomatoes
• 25ml Olive oil
• 2 cloves Garlic

Method

1. Prep the ingredients Set out chicken breast, potato, zucchini, tomato, olive oil and garlic. Wash, trim, and chop potato, zucchini, tomato and garlic before heating the pan. Measure olive oil.
2. Heat the oven Preheat the oven to 220C. Line a large tray so the vegetables can roast in a single layer.
3. Start the vegetables Toss zucchini, tomato, garlic and potato with olive oil, spread on the tray, and roast for 15 minutes.
4. Add the protein Add chicken breast to the tray and roast for 18-22 minutes, until cooked through.
5. Check doneness The vegetables should be tender with browned edges, and the chicken should be hot all the way through.
6. Serve Divide onto plates while the roasted ingredients are still warm.
