  • 540g Firm tofu
  • 3 sweet potatoes Sweet potato
  • 1 head Broccoli
  • 1 capsicum Capsicum
  • 25ml Olive oil
  • 2 cloves Garlic

Method

  1. Prep the ingredients Set out tofu, sweet potato, broccoli, capsicum, olive oil and garlic. Wash, trim, and chop sweet potato, broccoli, capsicum and garlic before heating the pan. Measure olive oil.
  2. Heat the oven Preheat the oven to 220C. Line a large tray so the vegetables can roast in a single layer.
  3. Start the vegetables Toss broccoli, capsicum, garlic and sweet potato with olive oil, spread on the tray, and roast for 15 minutes.
  4. Add the protein Add tofu to the tray and roast for 12-15 minutes, until hot and lightly browned.
  5. Check doneness The vegetables should be tender with browned edges, and the tofu should be hot and lightly browned.
  6. Serve Divide onto plates while the roasted ingredients are still warm.
