Ingredients

  • 520g Firm tofu
  • 330g Pasta
  • 420g Canned tomatoes
  • 120g Baby spinach
  • 120g Cheese
  • 2 cloves Garlic

Method

  1. Prep the ingredients Set out tofu, pasta, canned tomatoes, spinach, cheese and garlic. Wash, trim, and chop spinach and garlic before heating the pan. Measure canned tomatoes and cheese.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
  3. Cook the base Heat a large pan over medium heat and cook tofu with spinach and garlic until browned or softened.
  4. Make the sauce Stir in canned tomatoes and simmer for 8-12 minutes until thickened and evenly mixed.
  5. Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
  6. Bake Transfer to a baking dish, scatter over cheese, and bake at 200C for 15-20 minutes until bubbling and golden.
  7. Rest and serve Rest for 5 minutes before dividing into serves.
