Ingredients

  • 360g Pasta
  • 420g Canned tomatoes
  • 1 zucchini Zucchini
  • 120g Baby spinach
  • 160g Cheese
  • 160ml Milk

Method

  1. Prep the ingredients Set out pasta, canned tomatoes, zucchini, spinach, cheese and milk. Wash, trim, and chop zucchini and spinach before heating the pan. Measure canned tomatoes, cheese and milk.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of cooking water.
  3. Cook the base Heat a large pan over medium heat and cook zucchini and spinach until softened and smelling good.
  4. Make the sauce Stir in canned tomatoes and milk and simmer gently for 5-8 minutes until slightly thickened.
  5. Combine Fold the pasta through the sauce. Add a splash of pasta water if the sauce needs loosening.
  6. Bake Transfer to a baking dish, scatter over cheese, and bake at 200C for 15-20 minutes until bubbling and golden.
  7. Rest and serve Rest for 5 minutes before dividing into serves.
