Ingredients

  • 560g Chicken breast
  • 330g Rice
  • 200g Frozen peas
  • 220g Mushrooms
  • 80g Parmesan
  • 180ml Milk

Method

  1. Prep the ingredients Set out chicken breast, rice, peas, mushroom, parmesan and milk. Wash, trim, and chop mushroom before heating the pan. Measure parmesan and milk.
  2. Start the pan Heat a deep oven-safe pan or pot over medium heat and cook chicken breast until browned or warmed through.
  3. Add vegetables Add peas and mushroom and cook for 3-5 minutes until softened.
  4. Add the base Stir in rice and milk. Add about 4 cups water so the grains can cook without drying out.
  5. Cook through Simmer or bake at 200C for 18-28 minutes until the rice is tender and the mixture is hot.
  6. Finish Scatter over parmesan and let it melt. Rest for 5 minutes so the texture settles.
  7. Serve Fluff the rice, check the grains are tender, and divide into serves while warm.
