Ingredients

  • 580g Chicken breast
  • 320g Rice
  • 280ml Milk
  • 140g Cheese
  • 160g Frozen peas
  • 2 carrots Carrot

Method

  1. Prep the ingredients Set out chicken breast, rice, milk, cheese, peas and carrot. Wash, trim, and chop carrot before heating the pan. Measure milk and cheese.
  2. Start the pan Heat a deep oven-safe pan or pot over medium heat and cook chicken breast until browned or warmed through.
  3. Add vegetables Add peas and carrot and cook for 3-5 minutes until softened.
  4. Add the base Stir in rice and milk. Add about 3 1/2 cups water so the grains can cook without drying out.
  5. Cook through Simmer or bake at 200C for 26-36 minutes until the rice is tender and the mixture is hot.
  6. Finish Scatter over cheese and let it melt. Rest for 5 minutes so the texture settles.
  7. Serve Fluff the rice, check the grains are tender, and divide into serves while warm.
