560g Salmon fillet
4 potatoes Potatoes
1 head Broccoli
130g Greek yoghurt
2 cloves Garlic
20ml Olive oil

Method

Prep the ingredients Set out salmon, potato, broccoli, greek yoghurt, garlic and olive oil. Wash, trim, and chop potato, broccoli and garlic before heating the pan. Measure greek yoghurt and olive oil.
Heat the oven Preheat the oven to 220C. Line a large tray so the vegetables can roast in a single layer.
Start the vegetables Toss broccoli, garlic and potato with olive oil, spread on the tray, and roast for 15 minutes.
Add the protein Add salmon to the tray and roast for 12-15 minutes, until the salmon flakes easily.
Check doneness The vegetables should be tender with browned edges, and the salmon should flake easily.
Serve Divide onto plates and add greek yoghurt while the roasted ingredients are still warm.
