Ingredients

  • 320g Tuna
  • 330g Pasta
  • 400g Canned tomatoes
  • 100g Baby spinach
  • 1 onion Brown onion
  • 2 cloves Garlic

Method

  1. Prep the ingredients Drain the tuna well. Finely chop the onion and garlic, rinse the spinach, and set out the pasta and canned tomatoes before you start cooking.
  2. Cook the pasta Bring a large pot of salted water to the boil and cook the pasta until just tender. Drain, saving a small mug of pasta water.
  3. Cook the base Heat a large pan over medium heat. Cook the onion until softened, stir in the garlic for 30 seconds, then add the drained tuna and warm it through gently.
  4. Make the sauce Stir in the canned tomatoes and simmer for 8-12 minutes until the sauce thickens slightly and the tuna is evenly coated.
  5. Combine Add the cooked pasta and spinach to the pan. Toss until the spinach wilts, adding a splash of the reserved pasta water if the sauce needs loosening.
  6. Serve Toss once more, then divide into bowls while the pasta is still hot.
