Ingredients

  • 500g Chicken breast
  • 320g Lentils
  • 280g Rice
  • 110g Baby spinach
  • 2 tomatoes Tomatoes
  • 2 cloves Garlic

Method

  1. Prep the ingredients Set out chicken breast, lentils, rice, spinach, tomato and garlic. Wash, trim, and chop spinach, tomato and garlic before heating the pan. Drain lentils.
  2. Cook the base Cook rice according to the packet directions, then let it steam off for a few minutes so the bowl is not watery.
  3. Prepare the protein Cook chicken breast in a pan until browned and cooked through, then rest for a minute before serving. Stir in lentils for the last 2 minutes so they heat through.
  4. Prepare the vegetables Cook garlic for 3-5 minutes until tender, then add spinach and tomato off the heat.
  5. Season the bowl Season the warm ingredients with salt and pepper before assembling.
  6. Assemble Divide rice, chicken breast and lentils, and vegetables between bowls.
  7. Serve Serve warm, checking that each bowl has a balanced mix of protein, vegetables, and base.
