Ingredients
- 340g Tuna
- 300g Brown rice
- 2 tomatoes Tomatoes
- 120g Baby spinach
- 120g Greek yoghurt
- 18ml Olive oil
Method
- Prep the ingredients Set out tuna, brown rice, tomato, spinach, greek yoghurt and olive oil. Wash, trim, and chop tomato and spinach before heating the pan. Drain tuna. Measure greek yoghurt and olive oil.
- Cook the base Cook brown rice according to the packet directions, then let it steam off for a few minutes so the bowl is not watery.
- Prepare the protein Drain tuna well and keep it ready for the bowl.
- Prepare the vegetables Chop tomato and spinach into bite-sized pieces so every forkful has a mix of textures.
- Season the bowl Stir greek yoghurt with a pinch of salt to make a spoonable sauce. Add a spoonful of hot water only if it looks too thick.
- Assemble Divide brown rice, tuna, and vegetables between bowls.
- Serve Spoon over the yoghurt sauce, drizzle with olive oil, and season to taste before eating.
